Introduction to Sucrase
Sucrase is also called "invertase". One of the glycosidases, invertase (β-D-fructofuranoside fructohydrolase) (EC.3.2.1.26) specifically catalyzes the hydrolysis of β-D-fructofuranoside bonds in non-reducing sugars, Relatively specific. It can not only catalyze the hydrolysis of sucrose to produce glucose and fructose, but also catalyze the hydrolysis of raffinose to produce denbiose and fructose.
