After saponification of oil, there are still some substances such as sterols, polymer alcohols, hydrocarbons, pigments and fat-soluble vitamins that are insoluble in water but soluble in organic solvents. These substances are collectively referred to as unsaponifiable matter. The content should be limited within a certain range. The higher the unsaponifiable content, the worse the oil quality.
