The role of invertase
Sucrose is catalyzed by invertase. Hydrolyzed into two reducing sugars, D-glucose and D-fructose. Sucrase plays a major role in plant transportation and storage and carbohydrate metabolism. It also plays an important role in osmotic regulation, resistance to growth and reproduction, and signal transduction.
