Introduction to Pepsin

Pepsin is a digestive protease, secreted by gastric chief cells in the stomach, and its function is to break down food proteins into small peptide fragments. The main cell secretes pepsinogen, which is stimulated by gastric acid or pepsin to form pepsin, which is not directly produced by cells.
